Ingredients

1-½ pounds cooked chicken breast, shredded
1 cup of Jasmine rice
6-½ cups unsalted chicken stock
1 tablespoon minced ginger
1-½ teaspoon sesame oil
Sea salt to taste
Ground white pepper to taste
Chopped green onions, for garnish
CHICKEN PORRIDGE

Directions

1. Rinse the rice with cold running water and drain well.
2. Place 1 tbsp ginger, Jasmine rice, and the chicken stock in the BSTY Pressure Cooker.
3. Lock the lid in place and double check that the vent is in the sealed position. Press Porridge and set for 35 minutes. When the timer runs out, allow the pressure to naturally release, about 10 to 15 minutes. Before opening the pressure cooker be sure the red floater valve is in the down position.
4. Season shredded cooked chicken breast with sesame oil, sea salt and ground white pepper. Taste and adjust the seasonings to your liking.
5. Open the lid carefully. Bring the rice porridge to a simmer over medium heat using the Saute’ button. Stir until desired consistency and season with sea salt *Chef’s Suggestion* We used 1-¼ tsp of sea salt.
6. Turn off the heat by pressing Cancel and add the shredded cooked chicken breast to the rice porridge.
7. Garnish with chopped green onions and serve.

Chef's Tip

We love to use homemade chicken stock for this recipe. Substitute 3 cups unsalted homemade chicken stock + 3 ½ cups water for the 6 ½ cups store-bought unsalted chicken stock. Garnish with ginger for a more flavorful porridge.


Caution

Before opening the pressure cooker, use one of the included plastic or other utensil to carefully turn the pressure valve to "RELEASE" and then wait 2-3 minutes for the steam to be released and the red floater valve is in the down position before opening the cooker. When opening the cooker, use pot holders, and always keep your body, face and hands away from the steam vent. Be sure to stand behind the lid as you open it so the hot steam and condensation don't get on you. As with all kitchen appliances, be sure to keep the cooker out of reach of children.
